Here's how to make the dish from Virginia that you saw on the episode!

Ingredients

• 8 oz pulled pork or bacon

• 2 pounds chicken parts

• 8 cups water

• 3 Yukon potatoes, cubed

• 3 sweet onions, diced

• 1 (28 ounce) can whole peeled tomatoes, chopped

• 2 cups canned whole kernel corn

• 1 (10 ounce) package frozen lima beans

• 2T chopped garlic

• 2 T Worcestershire sauce

• 1/2 tsp smoked paprika

• 2 T chopped herbs (parsley, rosemary thyme)

• ½ teaspoon kosher salt

• ¼ teaspoon ground black pepper

• 2 oz veg oil


Instructions

1. In a large pot over high heat, render the fat from the bacon and combine 1/2 the chicken and water and bring to a boil. Reduce heat to low, cover and simmer for 45 minutes, or until chicken is tender.

2. In a roasting pan, cover the remaining chicken with oil, salt, pepper and roast inn oven for 30 mins at 350 degrees.

3. Remove chicken and allow to cool until easy to handle. Remove meat and discard the skin and bones. Chop meat into bite size pieces and return to the soup.

4. Pull roasted chicken from oven and pull meat from bones. Add to stew.

5. Add the potatoes, onions, tomatoes, corn, lima beans, Worcestershire sauce, salt and ground black pepper, other spices and herbs. Stir well and simmer, uncovered, for 1 hour.

6. Serve with corn bread muffins
